I am long overdue for a blog update, which means I am not very successful at finding a balance lately. Work has just been ridiculous since Thanksgiving, which correlates exactly to the last time I was able to get a blog entry in!
I can't say that I have any good updates, but I did make some delicious pizza today, so I thought I would at least post a recipe or two.
Chicken and Tomato Pizza
One basic pizza crust, homemade or store-bought
2-3 fresh chopped plum tomatoes or a can of diced tomatoes
2 cups of chopped roasted chicken (leftover rotisserie chicken works superb)
Cheese, provolone and mozzarella
dried basil and oregano
salt and pepper
Layer sliced provolone cheese on pizza dough. Evenly spread tomatoes and cheese and fresh garlic on top of cheese. Sprinkle basil and oregano and salt and pepper to taste. Lightly sprinkle some shredded mozzarella on top. Bake for 15 minutes at 475.
Buffalo Chicken Pizza
One basic pizza crust, homemade or store-bought
2 cups of chopped roasted chicken (leftover rotisserie chicken works superb)
Provolone and Feta cheese
1 cup of Frank's hot sauce
Ranch or Bleu Cheese dressing on the side.
Layer sliced provolone cheese on pizza dough. Mix chicken and hot sauce and pour evenly on top of the cheese. Sprinkle with Feta cheese. Bake for 15 minutes at 475.
